The scientific name for the cocoa tree is Theobroma cacao, which means "food of the gods" in Greek. This name reflects the reverence these ancient cultures had for cocoa.

While often used interchangeably, "cacao" and "cocoa" have slight differences in meaning. "Cacao" typically refers to the tree, its beans, and the raw form of the product, while "cocoa" is often used for the processed and roasted product used to make chocolate.

Cocoa beans come from the cacao pod, which grows directly on the trunk of the cacao tree. The pods can be different colors, such as yellow, red, or purple, depending on the variety.

White chocolate does not contazin cocoa solids, which give dark and milk chocolate their color. It is made from cocoa butter, sugar, and milk solids, resulting in its creamy white appearance.

Chocolate has a specific temperature range for tempering, a process that gives it a shiny appearance and a satisfying snap. The ideal temperature for dark chocolate is around 88-91°F (31-33°C), while milk chocolate is around 86-88°F (30-31°C).

In moderation, dark chocolate with a high cocoa content can have health benefits. It is a source of antioxidants, and some studies suggest it may help improve heart health and boost mood due to the release of endorphins.

Ivory Coast (Côte d'Ivoire) is the largest producer of cocoa globally, followed by Ghana. These two West African countries contribute significantly to the world's cocoa supply.
